bbq shredded chicken and carmelized red onion ranch spaghetti

i'm going to start off with the recipe i made last night w/ my good friend, asian steph... it was soo yummy! and EASY! maybe, possibly, a little healthy too :) or lets just say it is!
this reminds me a little of bbq chicken pizza or salad.. which happens to be one of my favorite things... next time, i might try some corn in there..

i was going to try to make my own bbq chicken in the slow cooker, but decided last min that i really wanted to eat this last night. so i just went to the store and got a rotisserie chicken, shredded it and put a light coat of bill johnsons bbq sauce.. so yummy!

BBQ Shredded Chicken and Caramelized Red Onion Ranch Spaghetti

1 lb thin spaghetti noodles

4 Tablespoons extra virgin olive oil

1/2 large red onion, peeled and finely chopped

2 Tablespoons dry Ranch Dressing Mix

3/4 Cup chopped fresh cilantro leaves

Shredded BBQ Chicken

1. Cook spaghetti noodles according to package directions; drain and rinse with cold water to stop cooking. Place olive oil into a large pot over medium heat. Saute red onions until softened and golden. Add cooked spaghetti to onions; mix and add dry Ranch Dressing seasoning and cilantro leaves. Season with a pinch of salt and pepper to taste. Place noodles onto serving plates and top with warm shredded BBQ chicken. Garnish with cilantro leaf and serve.

While that DOES look delicious, please tell me you didn't eat that whole thing. Also, skip the corn suggestion. You just end up pooping that out anyway.

i didnt eat the whole thing. it made about 5 servings...and i only ate 2 of them over two days!
