this weekend was my nephews baby party. we had lunch at china chili with ~150 of our relatives and family friends lol. i got left overs, as usual... one of the things i also got was a ton of white rice.. the people at my table joked about taking it home to make fried rice.. i joked about taking it back to the kitchen after the lunch and asking the cooks to make me fried rice to take home..
well, tonight, steph and i decided to make a lo/fong fried rice fusion, ha... ive never actually made fried rice (because my mother spoiled me and made food for me my whole life, and if she doesnt cook for me, china chili will...) so, steph did most of the cooking..
but here is yet another made up recipe! yay! im getting a little better w/ it..
spam fried rice
5-6 cups of cooked rice.. or i really dont know how much rice we had (it was a whole square styrofoam container)
6 eggs
1 bag of peas and carrots
1 onion
1 can of spam cut into small pieces
soy sauce, to taste
oyster sauce, to taste
pepper, to taste
1. scramble and cook eggs. set aside.
2. (i didnt do this, but id like to next time) fry spam chunks. set aside.
3. cook onions, in a little oil, or maybe spam oil? ha
4. add rice.
5. add eggs, peas and carrots.
6. add spam. flavor with pepper, soy sauce and oyster sauce

Almost like the version I make! I do pan fry the spam after the eggs and add in some green onions (like the white part) as well as some ginger and garlic. Then the carrots and peas. After that, it's just like your recipe! :) The last fried rice I made had cabbage and it definitely adds a nice crunch to the fried rice.
