we had our monthly potluck tonight for our career fellowship... i saw this on cristine's blog and thought it looked simple enough :) and it was.. and it was tasty! i highly recommend it.. unless you dont like dijon or maple or chicken, ha!
however, this dish did make me a little angry... because as i was putting it in my car.. it leaked.. a lot on my carpet.. so i had to clean it up... then when i was driving to my friends house, a car was about to side swipe me, so i braked really hard and the tray went sliding.. and spilled out like half of the sauce :( needless to say, my carpet is messed up.. and my car will probably smell like dijon mustard for a long time... boo!
maple dijon chicken
1/2 cup dijon mustard
1/4 cup pure maple syrup
1 TBSP apple cider vinegar
1 lb chicken thighs
Preheat oven to 450.
Mix mustard, maple syrup, and vinegar in a bowl. Put chicken in baking dish. Cover with mustard mixture.
Bake for 40 minutes or until chicken is cooked through. Top with rosemary, if desired.
