Baked Zucchini Sticks

I was looking for something to make for dinner w/ my good friend, Jessica!  Although you know I am not a big veggie person, breaded veggies are usually delish ;)

Baked Zucchini Sticks and Sweet Onion Dip
by King Arthur Flour

3 medium zucchini, unpeeled, cut into 3 in sticks (I made 2 vertical cuts and 2 horizontal cuts to make 9 sticks per part)
1 tablespoon salt

1 cup panko bread crumbs
1/2 cup grated Parmesan Cheese
1 tablespoon pizza seasoning or Italian herbs
olive oil spray
2 eggs

1. Place zucchini in a colander and sprinkle salt.  Let zucchini drain for 1 hour or longer, rinse, pat dry.

2.  Combine Panko, Parmesan, and Seasoning

3.  Line baking sheet with foil and spray with oil.

4.  Dip sticks in egg, roll in crumb mixture, place sticks on baking sheet.

5.  Bake at 425F for 12 mins, turn over, and bake for 8 more minutes.  Serve with dip.

1 tbsp butter
1 medium sweet onion, sliced and peeled
2 tbsp cider vinegar
2 tbsp honey
1 tbsp mustard
1 cup mayo
salt and pepper

1.  Melt butter over medium heat, add onions until they soften and caramelize.

2.  Remove onions from heat, add vinegar.

3.  Place onions and vinegar into food processor.  Add honey and mustard, and process until smooth.

4.  Add mayo and salt and pepper to taste.  Refrigerate until ready to serve.
