i have struggled to find a good ice cream recipe.. i used all of the cuisinart recipes from the ice cream maker instruction manual.. and they turned out......... meh. ok i guess... some better than others, but nothing super delicious...
a woman from my church gave me her base recipe which turned out to be the ben and jerrys base recipe... and i just happened to have purchased the recipe book recently...
alli and s.lo came by before small group one tuesday to chill and we tried to make a batch.. we went through my pantry to see what kind of ice cream we could make... i only had pineapple, so we went for it! :) and it was delicious! FINALLY, a good batch of ice cream... needless to say, there wasnt any left.. (we did share with the other people in our bible study too lol)
pineapple ice cream
adapted from ben and jerrys recipe book
sweet cream base 1
2 large eggs
3/4 cup sugar
2 cups heavy whipping cream
1 cup milk
16-20 oz of crushed pineapple
1/2 cup sugar (seperated 1/4c, 1/4c)
whisk the eggs in a mixing bowl until light and fluffy (about 1-2 minutes)
whisk in sugar slowly, a little at a time until fully blended (about a minute more)
pour in cream and milk and whisk to blend
drain pineapple juice into mixture, add 1/4c to mixture
mix 1/4c sugar to crushed pineapple
churn in ice cream maker... at the last 5 minutes, add the crushed pineapple in...
yum :)
we halved the recipe last time and it filled my 1-1/2 quart ice cream maker.. even though its supposed to make 1 quart? so we tried to make a full batch today but had to break it into two batches...
