ranch mac and cheese

i love mac and cheese... i love ranch... a food blog that i read posted a ranch mac and cheese recipe that she raved about... id never made mac and cheese from scratch, so i thought it looked simple enough and id try it... but i wanted to add some meat.. so i opened up a can of chicken and shredded it up.. this turned out ok.. not as fabulous as i had hoped... not very cheesey or ranchy.. so i will continue to search for a beloved mac and cheese recipe..

Ranch Macaroni and Cheese
adapted from Taste of Home

1 pound macaroni
1 cup milk
1/4 cup butter, cubed
1 envelope ranch salad dressing mix
1/2 teaspoon garlic powder
Salt and pepper to taste
1 cup shredded Monterey Jack cheese
1 cup shredded Colby cheese
1 cup sour cream
1/2 cup crushed Ritz crackers
1/3 cup grated Parmesan cheese
2 cans chicken breast shredded (added this!)

1. Cook macaroni according to package directions. Meanwhile, in a Dutch oven, combine the milk, butter, dressing mix, garlic powder and salt and pepper; heat through. Stir in Monterey Jack and Colby cheeses until melted. Stir in sour cream.

2. Drain macaroni; stir into cheese sauce with the Ritz crackers. Sprinkle with Parmesan cheese.
