salsa recipe

i had promised my friends (the ones that gave me the old beer to make my beer carnitas) that i would make them the carnitas if it turned out well... this summer i had time to make them dinner and hang out w/ them... i was thinking about the things i would need to go w/ the carnitas and i immediately thought of the salsa that a friend at church makes! i thought it would be a nice addition to the carnitas!


salsa!

6-7 Roma Tomatoes, 
1 small onion 
cilantro, minced (amount depends on  your taste)
1 14-16  oz? can petite diced tomato, do not drain
1 small can El Pato Mexican Hot sauce 
2 tsp salt
3-4 tsp garlic powder
1-2 tsp white pepper
3-4 tsp black pepper 
(all seasoning to taste depending on how hot/garlicy you want it to be)

1. dice the tomatoes, then pulse a couple of times in the food processor to your desired chunkiness. pour tomatoes into mixing bowl.
2. dice the onion, then pulse a couple times in food processor to your desired chunkiness. pour into mixing bowl.
3. add and mix all other ingredients into mixing bowl.

Let sit over night, can keep up to 2 weeks.
