almond jello

i grew up eating almond jello and LOVING IT! its soo yummy... however, honestly, i am not a fan of the fruit.. i used to just pick out all the jello and throw the mixed fruit away :) i love the cool, sweet, almond flavor in the jello.

this was the first time i made it--for our church picnic... shirley gave me the recipe out of an easy chinese recipe book... and it was pretty simple... maybe next time, ill just make a pan of the jello for myself! ;)

almond jello

2 TB knox gelatin
1 cup plus 1/4 cup water
2 cups milk
1/2 cup sugar
1TB almond extract

syrup
1/2 cup sugar
3 cups water
canned mix fruit

1. sprinkle gelatin on 1/4 cup water to soften
2. bring 1 cup of water to boil. add glatin and stir until dissolved
3. stir in sugar, milk and almond extract
4. pour mixture into a 9x13 pan. cool in fridge.
5. bring sugar and water to boil to make syrup. when cool, chill in fridge
6. cut almond jello into squares. pour syrup over jelly. add mixed fruit.

notes..
i used a large can from costco and made 3 batches of the jello... i still think that was a lot of fruit to jello ratio. so just eye it when adding the fruit.. i like a half to half ratio maybe.. also, w/ my 3 batches of jello, i only used 2 batches of the syrup because there was syrup from the canned fruit..

That's so funny that you love it and I stay away from it. I think I remember you picking out the jello and leaving the rest when we were little!
