banana bread!!

i have always loved banana bread... its something my grandma (my moms mom) always made for us (along with my most favorite thing in the world--beef chow fun) when my mom used to visit her on fridays...

before this recipe, i used to just use a quick bread mix from the store... which was ok.. but not the best.. ai-chau came over one morning and shared this recipe w/ me and i ABSOLUTELY love it!

the 7 bananas might sound ridiculous, but trust me, it isnt!!! i have made it at least 5 times now. its so easy and incredibly delicious... and my friends keep fighting over it when i make it :)

Banana Bread

Ingredients:


½ cup salted butter, soften


1 cup white granulated sugar


2 large eggs


7 small ripe bananas


¼ cup milk


2 tsp vanilla extract


2 cups all purpose flour


1 tsp baking soda


½ tsp salt


1 tsp cinnamon


Extra ¼ cup sugar


1) Pre-heat oven at 350 degrees.


2) Whisk butter and 1 cup sugar together until well blended


3) Add 2 large eggs, baking soda, salt, & vanilla extract to butter-sugar mixture and whisk well.


4) Stir in flour and mix well, add milk


5) Put all bananas in a Ziploc bag, seal it, and mash well with hands until there are no more “chunks”


6) Stir bananas in mixture, mix well.


7) Stir in cinnamon, mix well


8) Gently stir in ¼ cup sugar


9) Pour into 2 loaf pans


Bake for 50 minutes.
